The new bakery would be located at the base of a 1970s high rise, within a bustling and rapidly changing neighbourhood.

Our task was challenging, because we had to fit an active commercial kitchen and retail space within a long, narrow footprint – about half the size of Fieldstone’s other location. To come up with the most functional layout, we spent time at the site, putting on a “baker’s hat” and working closely with the owner.

Having agreed the space shouldn’t be a carbon copy of the original, we chose a simple material palette that is timeless and easy to maintain. Epoxied concrete floors, wood millwork and bare lightbulbs create a rustic-Mediterranean – yet contemporary – feel. The final space feels like a Fieldstone Bakery, but in harmony with its new setting.
